Red Curry with Shrimps

This is a quick and easy recipe that works well with shrimp or crab meat.

1 Pkt Roi Thai Red Curry Simmer Sauce
700g large shrimps, devanned & tails removed, or 700g crab meat, washed.
1 tbsp coconut oil (or extra virgin olive oil)
2 cloves of garlic, minced
1 tbsp fresh ginger, minced
½ a large zucchini, sliced into 50mm (2 inch) strips
1 red pepper, chopped
3 stalks celery, chopped
1 carrot, chopped
½ medium onion, chopped

  • In a large skillet or wok over medium-high heat, melt the coconut oil.
  • Add garlic and ginger and sauté for about 1 minute until fragrant; take care not to burn the garlic.
  • Add all vegetables and sauté for another 5 minutes until softened.
  • Add shrimp or crab meat and then the Roi Thai Red Curry Simmer Sauce and stir to combine the ingredients. Simmer for 4-5 minutes and remove from the heat and season with salt & pepper to taste.
  • Garnish with diced spring onions and serve with rice
