Yellow Curry with Chicken

1 pkt Roi Thai Yellow Curry Simmer Sauce
400g chicken thighs, diced
2 cloves of garlic, minced
1 red pepper, de-seeded, rough chopped
1 green pepper, de-seeded, rough chopped
1 medium carrot, chopped
1/4 cup fresh coriander (stems and leaves), sliced into strips to garnish
salt & pepper to taste
  • In a large skillet or wok over medium-high heat, melt the coconut oil.
  • Add garlic and sauté for about 1 minute until fragrant, take care not to burn the garlic.
  • Add the chicken and the Roi Thai Yellow Curry Simmer Sauce. Once boiling reduce the heat and simmer for 10 minutes.
  • Add all vegetables and simmer for an additional 10 minutes until softened.
  • Remove from the heat and season with salt & pepper to taste. Plate and garnish with the coriander.
  • Can be served with rice.
