Raisin Cupcakes

1 cup Sunreal raisins
1/3 cup rum or orange juice
2 cups flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 cup butter, softened
1 cup sugar
3 large eggs
1 tsp vanilla
3/4 cup half and half or milk
  • Preheat oven to 175C
  • In a sauce pan, bring raisins and rum (or orange juice) just to a simmer over medium heat. Once it begines to simmer remove from the heat.
  • In a bowl combine flour with baking powder and cinnamon.
  • In another bowl beat together butter and sugar until light and fluffy. Add the eggs and vanilla.
  • Add ¼ of the flour mixture and 1/3 of the egg mixture and stir combine. Continuing adding part at a time, stirring finishing with the last of the flour.
  • Drain the raisins and discard soaking liquid, then stir raisins into batter.
  • Spoon batter into prepared muffin pan filling 3/4 full.
  • Bake for 20-25 min or until lightly browned. Let cool for 10 minutes and remove from the tray.
