Mango Salsa

Ingredients:
1 cup Sunreal dried mango, finely diced
3 large Roma (Italian) tomatoes, seeded and finely chopped
1/2 small red onion, finely chopped
1 medium avocado, chopped
1 medium lime, juiced
1 tsp minced jalapeno pepper
1/4 cup coriander, minced
salt and pepper to taste
 
Mango-Salsa
Instructions:
  • Rehydrate the Sunreal dried mango by pouring boiling water over it and letting it sit for 15-30 minutes. Drain.
  • Combine all ingredients, cover and chill for 30 minutes.
